Creamy Kale Galette

1. Preheat oven to 180 degrees celsius (350 degrees Fahrenheit)
2. Wash and chop the vegetables
3. In a skillet, heat oil over med-high heat. Add garlic and cook until fragrant
4. Add chopped vegetables and stir-fry until wilted
5. Stir in the butter
6. Remove skillet from heat and add in the light cream cheese, salt and pepper and stir until vegetables are evenly coated
7. Spread the vegetable filling on the puff pastry, leaving a 2-inch border. Fold the puff pastry inwards
8. Beat the egg yolk and brush it over the pastry
9. Top the filling with pine nuts and bake the galette in the oven for 15-20 minutes, until the edges are golden brown and crispy
10. Cut into slices and serve
